• 400g Sweetened Condensed Milk
  • 450g Light Brown Soft Sugar
  • 130g Milk
  • 120g Unsalted Butter
  • Vanilla Extract
  • Salt


  • Pot
  • Scales
  • Stirring stick
  • Stovetop
  • Thermometer
  • Baking tin
  • Greaseproof/Parchment paper


  1. Line Tin with greaseproof paper
  2. Cube Butter
  3. Add Butter to pot
  4. Add Sweetened Condensed Milk to pot
  5. Add Light Brown Soft Sugar to pot
  6. Add Milk to pot
  7. Heat on low until sugar is dissolved and butter is melted, stir often
  8. Slowly raise to a rolling boil
  9. Bring up to soft ball temp (112 to 116 °C [234 to 241 °F], alternative test by dropping a small spoonful into cold water), if not using a non-stick pot stir carefully to stop it catching and burning on the edges
  10. Remove from heat
  11. Beat the mixture in the pot
  12. Add pinch of Salt
  13. Add large splash of Vanilla Extract
  14. Beat
  15. Let cool in pot for 10 minutes
  16. Beat
  17. Let cool for 5 mins
  18. Beat
  19. Pour into lined tin
  20. Cool in refrigerator for 3 hours
  21. Turn out
  22. Cut into pieces
